Banana-Pineapple Bread

  • 3 cups plain flour

  • 1 tsp salt

  • 3 eggs, lightly beaten

  • ¾ cup oil

  • 1½ tsp vanilla

  • 2 cups sugar

  • 1 tsp baking soda

  • 2 cups mashed bananas (about 6 small bananas)

  • 1 (8-oz) can crushed pineapple

    Directions: Stir all ingredients together until well mixed. Pour into two greased and floured loaf pans. Bake at 350 degrees for 60-70 minutes or until done. Cool in the pans for 15 minutes. Remove and cool on a wire rack. Yield: 2 loaves.
